I am occasionally faced with preparing food for many people. I have in the past done catering for a living and on occasion still help with parties. I have always enjoyed cooking and still do it on a small scale for parties at my house. This morning I was faced with a little larger job. I made an Asian Ramen Coleslaw for 200 people. I am 1 of several that are preparing food. One gentleman smoked 16 pork butts and several pork loins yesterday and is smoking turkey breasts and cabbage for today’s feast. We have all been to these parties but think about the work of scaling up to prepare and serve all these people.
Here’s my recipe:
9 32oz bags of cabbage mix for coleslaw
1 32 oz bag of sliced almonds
100 green onions, chopped, both greens and whites
30 bags of chicken flavor Ramen noodles
1 2oz jar sesame seeds
Dressing:
9 cups white vinegar
10 cups white sugar
1 cup salt
1 oz black pepper
20 chicken flavor packets from the Ramen
10 cups canola oil
(This can be adjusted to your desired taste.
Prepare:
Add the cabbage, green onions, almonds and crushed Ramen to a large container. I used a large storage tote. Yes you do need something this large.
Mix sugar, salt, pepper and flavor packets together then add vinegar and stir until combined. Let stand for 10 minutes and stir again. Add oil and combine.
Here’s the fun part. Wash your arms and hands well. Yes I said your ARMS! Get in there and mix the cabbage, green onions, almonds, sesame seeds and Ramen well. Add half of the dressing, mixing well, then add the remainder of the dressing and continue mixing until all is well combined.
At this point, I put the coleslaw into manageable buckets and seal them for transport.
Make the coleslaw at least a couple of hours before serving so it can meld flavors. Roll the buckets so the dressing gets distributed several times to flavor the cabbage.
This coleslaw is different from most as it has a nice nutty flavor and the Ramen gives it a nice crunch. It’s a lot of work but well worth it as it is a hit at most parties. Enjoy!

- 3 green onions, chopped
- 1 (6 ounce) bag coleslaw mix
- 3 tablespoons sesame seeds
- 1cup toasted almond
- 1(3 ounce) package chicken-flavored ramen noodles, reserve seasoning packet for dressing
Dressing
- 1⁄4 cup oil
- 3 tablespoons white vinegar
- 1⁄4 cup sugar
- 1 teaspoon salt
- 1⁄2 teaspoon black pepper
- seasoning (reserved packet)
